This is a very special type of pepper widely used in Spanish cuisine: Basque chili peppers. When summer arrives at the Iberian peninsula, virtually in all of the North of Spain you can find these chili peppers, with beautiful color and eager to give tons of flavour to your meals.
These are not ordinary chillies. They stand out for their flavour, tender texture and very thin skin. Try it grilled with a little salt, pickled as an accompaniment to salads, in a gilda or in a banderilla, to spice up your stews or to accompany your legume dishes - particularly with red beans.
